Pasta Dough 3 eggs (substitute 1/4 cup of water per egg, if desired)
2 1/2 cups all-purpose flour
In a bowl, mix 2 cups of the flour and the eggs, and stir until the mixture begins to come together.
Knead the dough by hand (for 10 to 12 minutes) or by machine (4 to 5 minutes) until it’s smooth and elastic. Add remaining flour as needed.
Wrap in a tea towel and let it rest for about 30 minutes.
Use a pasta maker or a rolling pin to roll sections of the dough into sheets about 3 mm thick. Cut into any shape you’d like.
Cook in boiling salted water for 1 to 2 minutes.
