Stuffed Peppers

Description

A delicious Old World dish. There is some preparation upfront, but most of the work is done by your oven. This is a great dish for potluck dinners.

6 small green peppers, tops cut off, seeded

1 lb ground beef

1/2 cup cooked rice

1 tsp parsley

1/2 tsp paprika

1/2 tsp oregano

1/2 tsp allspice

2 tbsp ketchup

1/4 cup bread crumbs

1 egg, beaten

3 cups tomato, V8 or Clamato juice

salt & pepper

Methods/steps

Heat oven to 325˚F.

Mix beef, rice, parsley, paprika, oregano, allspice, salt, pepper, ketchup, bread crumbs and egg.

Stuff mixture into the peppers. Arrange in a roasting pan. Pour tomato, V8 or Clamato juice over the peppers. Bake, covered, for 2 hours.

Serve with mashed potatoes and corn.
