Beef tenderloin is an expensive cut, but instead of treating your friends to a fancy restaurant, make dinner at home. It will cost less than dining at a high-end steak joint.
2 centre-cut beef tenderloin roasts (ask your butcher to prepare)
salt & pepper
sour cream
prepared horseradish
2 tbsp extra-virgin olive oil
Preheat oven to 350˚F.
Heat olive oil in skillet. Season roasts with salt and pepper. Over medium-high heat, sear roasts on all sides. Place in baking dish.
Roast, uncovered, in a 350˚F oven until the internal temperature of the roast reaches 145˚F for medium-rare.
For horseradish cream, mix 3 parts sour cream to 1 part horseradish or to taste. Slice roast and pass around the horseradish cream.
